The Gargollassa variety is the result of two decades of experimentation and hard work to recover a native Mallorcan variety that was on the verge of extinction. Ancient documents, including the famous compilation of Archduke Luis Salvador, describe it as one of the most recommended varieties for the production of quality wines .
