The wine is vinified in wooden vats. Malolactic fermentation takes place in French oak barrels depending on the characteristics of the vintage, but never more than 10%. Ageing in new, single-use, extra-fine-grain French oak barrels and in 4,000-litre foudres (large wooden vats) for a period of between 16 and 18 months guarantees velvety tannins.

Before being marketed, this fantastic wine is left to age in the bottle for three years. The ageing potential is between 15 and 20 years.
